Asam tartrat (bahasa Inggris: tartaric acid, Racemic acid, (R,R)-Tartaric acid, DL-Tartaric acid, 2,3-Dihydroxybutanedioic acid, tartrate, Traubensaure, 2,3-Dihydroxysuccinic acid, Uvic acid, DL-Tartrate) merupakan senyawa organik turunan asam askorbat, seperti asam oksalat dan asam treonat.[3] Asam tartrat memiliki 4 gugus hidroksil dan merupakan salah satu asam primer yang dijumpai pada anggur selain asam malat dan asam sitrat.
Dari hasil penggalian arkeologi di Abydos, yang diproses dengan menggunakan tes radiokarbon, spektrometri FTIR dan HPLC dan test Feigl spot, diketahui bahwa asam tartrat telah digunakan paling tidak sejak zaman Naqada IIIa2 pada sekitar tahun 3.150 sebelum masehi, di Mesir.[4]
