Azeitão adalah keju dari Portugal yang dibuat dengan menggunakan susu domba mentah.[1] Keju ini berasal dari Setúbal di selatan Lisabon dan dinamakan berdasarkan desa yang bernama sama.[1] Keju Azeitão merupakan keju yang berbentuk bundar dan berukuran kecil dengan diameter 1 hingga 2.5 sentimeter dan tinggi 4 sampai 5 sentimeter.[1] Sementara itu, berat dari keju tersebut adalah 3.5 sampai 9 ons.[1] Keju ini memiliki warna putih hingga kuning pucat sedangkan kulitnya berwarna oranye kemerah-merahan.[1] Keju Azeitão memiliki aroma yang tajam dan tekstur yang lembut, tebal dan halus.[2] Untuk membuat keju Azeitão susu domba mentah dikentalkan terlebih dahulu kemudian air dadihnnya dibiarkan hingga mengering.[1] Kemudian garam ditambahkan pada dadih tersebut lalu keju disimpan selama 20 hari di ruangan dengan tingkat kelembaban 85 sampai 90%.[1]
