Daging sapi Matsusaka (松阪牛, Matsusaka-ushi, Matsusaka-gyū, juga disebut "daging sapi Matsuzaka") adalah daging sapi hitam Jepang asal wilayah Matsusaka, Prefektur Mie, Jepang. Daging tersebut memiliki ratio lemak daging yang tinggi. Di Jepang, daging tersebut adalah salah satu dari tiga Sandai Wagyū, "tiga daging sapi besar"; yang lainnya adalah daging sapi Kobe dan daging sapi Ōmi atau daging sapi Yonezawa. Sekitar 2500 sapi dijagal untuk dijadikan daging sapi Matsusaka setiap tahun. Daging tersebut memiliki harga jual yang tinggi.[1]
