Strudel (/ˈstruːdəl/, Jerman: [ˈʃtʁuːdəl]) adalah sebuah jenis pastri berlapis yang biasanya diisi dengan manisan. Hidangan tersebut menjadi populer pada abad ke-18 melalui Kekaisaran Habsburg. Strudel sering kali tak hanya dikaitkan dengan masakan Austria tetapi juga kadang-kadang dianggap sebagai pastri tradisional di seluruh wilayah bekas Kekaisaran Austria-Hungaria.
Asal resep
Resep-resep strudel tertua (Millirahmstrudel dan strudel lobak) berasal dari tahun 1696, dalam sebuah buku masak tulisan tangan di Perpustakaan Kota Wina (awalnya Wiener Stadtbibliothek).[1] Pastri tersebut merupakan turunan dari pastri-pastri Timur Dekat yang mirip (lihat baklava dan masakan Turki).[2]
