Kaymak atau Sarshir (bahasa Persia: سَرشیر saršir) adalah sebuah makanan susu krim yang mirip dengan krim gumpal, yang terbuat dari susu kerbau air, sapi, domba atau kambing di Asia Tengah, beberapa negara Balkan, beberapa negara Kaukasus, wilayah Turkic, Iran dan Irak. Di Polandia, nama kajmak merujuk kepada sebuah manisan yang mirip dengan dulce de leche.[1]
