Sapi biru Belgia

Sapi Biru Belgia (bahasa Prancis: Blanc-Bleu Belge, bahasa Belanda: Belgisch Witblauw) adalah jenis sapi potong dari Belgia.[1] Ini mungkin juga dikenal sebagai Race de la Moyenne et Haute Belgique,[2]  atau dikbil (secara harfiah berarti "pantat gemuk" dalam bahasa Belanda). Nama alternatif untuk trah ini termasuk Sapi Biru Putih Belgia.[3] Fisik Sapi Biru Belgia yang sangat ramping, sangat terpahat, dan sangat berotot disebut "otot ganda". Fenotip otot ganda adalah kondisi yang diwariskan yang mengakibatkan peningkatan jumlah serat otot (hiperplasia), bukan pembesaran (normal) serat otot individu (hipertrofi).[4]

Sifat khusus ini juga dimiliki oleh jenis sapi lain yang dikenal sebagai Piedmont. Kedua ras ini memiliki peningkatan kemampuan untuk mengubah pakan menjadi otot tanpa lemak, yang menyebabkan daging ras tersebut memiliki kandungan lemak dan kelembutan yang berkurang.[5] Nama Sapi Biru diambil dari warna rambutnya yang biasanya berbintik-bintik biru keabu-abuan; tetapi, warna sebenarnya dapat bervariasi dari putih hingga hitam.
